Honey Lemon Chia Seeds Drink


In Penang, with the tropical weather throughout the year, there are no Tulips on the street, but we have Malaysia Sakura, beautifully grown pink Sakura flowers that lasted for only a week.... I strolled around the neighborhood and managed to take a shot of the blossom season... ;)

As part of my job, I need to brainstorm new recipes that are easy to made, healthy and most importantly taste good. After receiving feedbacks from the public at various campaigns and roadshows,this is the top favorite recipe: Honey Lemon Chia Seeds Drink. It's refreshing and can be one of the best replacement option towards your coffee. Give it a try! 

Ingredients needed are pretty simple: water, lemon, honey, chia seeds. Yes, you might heard about chia seeds. It's in the trend. But what exactly it is? Chia Seeds are tiny black seed from the plant name Salvia hispanica, originated from South America. You can get Chia Seeds from any organic store nearby or at organic department at Aeon Jusco. Start preparing your ingredients!


Ingredients: (Prep for 2 pax) 
1. 750ml of drinking water 
2. 1 1/2 tablespoon of chia seeds 
3. 1/2 lemon (squeezed into juice)
4. 2-3 tablespoon honey (to taste)


Get ready with the ingredients? Let's start making the drink that refresh you anytime throughout the day and provides a powerful nutrition punch. It hydrates your body and it's so much better compared to a cup of Coke/ Teh Tarik. The directions as below:

Directions
1. Add chia seeds, lemon juice, water and honey into a jar.
2. Stir very well to combine.
3. Let it sit for 1 hour to allow chia seeds to swell up.
4. Chill it in fridge and serve it!

Both honey and sugar has calories in it. But which is more nutrient dense? Honey. Sugar is commonly man made sweetener, whereas honey is a natural sweetener that contains minerals and also antioxidant, antibacterial properties. Hence, honey is known to help cough and sore throat. However, diabetes patients need to be aware both honey and sugar, as they raise up blood glucose level, moderation is the key. 
Instead of drinking a bottle of sugar- dense orange juice, why not just squeeze 1/2 a lemon in your drink. I admit that some of the days when I am busy, I will take Vit-C supplement. Yet, lemon is still the best of all, which provide high amount of Vitamin Cs that increase our immune system. 

Lastly, we need only 1 - 1 1/2 tablespoon of the nutritional booster chia seeds. Don't put too much of it, you don't want your esophagus being fill up with chia seeds capsules. Chia seeds are high in soluble- fibre, which help our gut health as chia seed smooth digestion; they are also high in Omega-3 (ALA form) which prevents heart disease. Besides these 2 nutrients, chia seeds are good source of calcium, magnesium, iron, highly recommend for vegetarian.

Chocolate Lava Cake

Halo. Although I am a current part time student, with lots of free time, I seem to neglect my blog. This is mainly because I don't know what to share besides my tough journey of finding a clinical dietetics internship in Malaysia. Ya. All the challenges and heart-broken feedback... 
Anyway, baking this chocolate lava cake definitely cheers me up. I baked this with my friends.. yup, I learnt from this guy, Benedict. He's really pro, so I just helped out and listened for his instruction. 
So, to make sure that I know how to bake it myself.  I had the recipe from him, yeah!

Recipe: 
Ingredients:
8 oz baking chocolate chips/ bar ( preferably 4 oz dark chocolate 4 oz semi- sweet) 
1 1/4 of stick butter 
1/2 all purpose flour 
1 1/2 cup granulated sugar
3 eggs 
3 eggs yolk 
1 tsp vanilla essence

Procedure: 
1. Double boil the chocolate with butter. 
Make sure the butter and chocolate are fully melt and stir the mixture to prevent burn. 
2. Using an electric mixer, mix others ingredients together in a bowl.


3. After mixing #2 , pour in chocolate mixture, continue to mix. 

4. Pour in the batter into souffle cups. ( With this recipe, we had only 3 chocolate lava cake.)


5. Bake them 14minutes with 425° F. 
DENG deng!! Our homemade chocolate lava cake. We made it!!

CNY Peanut Cookies

Halo. I decided to bake Peanut Cookies (花生饼) for CNY and luckily I found peanut meal (花生粉) from Crestview Asian Market which costs USD 2.69/ packet.  It might be a little pricey but having peanut meal, save my time and efforts. If you can't find any peanut meal from any stores. Try the traditional way of making it. So, I follow the recipe of hong kitchen and it turns out great ! My first attempt of making peanut cookies is a success. Yippy!

I make some little changes and here's my recipe.




Ingredients and steps 

500g All purpose Flour500g Peanut meals

250g  powdered sugar1 tsp Salt
(Mix them evenly.)

Aprox 330g ( 1 and 1/2 cup) Canola Oil 

Slowly add Canola oil into the dry mix until it turns into a dough. (Agak- agak)  
2 egg yolks ( to brush on top of the cookie)

Hints:
Remember to add some oil onto the baking pan and also preheat the oven. (340 F)
Bake the cookies at 340 F for 10 minutes. 345 F for 5 minutes.
Let the cookies cool down. It will turns a bit darker in color.
If you want to make more, the proportion of all purpose flour : peanut meals is 1:1 and the powdered sugar is half of the all purpose flour.

Dough (if you are using peanut oil, I supposed the color of the dough will be a bit darker)

Baking Time- Cornflakes cookies

Halo. Although there will be no public holiday in the states, but I am looking forward for Chinese New Year. My facebook's news feed is fulled with Chinese New Year photos and songs which make me homesick. I miss CNY cookies so I decided to bake Cornflakes Cookies, special recipe from my sifu (Aunty Siew Sian).

Cornflakes cookies recipe:
1. 500g marjerin
2. 340g sugar
3. 2 eggs
4. 750g self raising flour
5. 280g raisins
6. 500g cornflakes

A. Cream 1& 2, then beat in 3.
B. Sieve 4 and mix in 5& 6.
Fold A into B.
Make round cookies and bake it in 165 degree C for 20 minutes or till it turns brown.
It's simple and easy. I enjoy baking!


Ingredients: self-rising flour/ all purpose flour # large egg, # raisins # cornflakes # powdered sugar


I can't find my mixer, so I use fork instead.



I can't find any red lids container. >.<  Only blue. 
After baking (if you like it to be even darker in color , bake in higher temperature and 3 mins longer)

Looks good!





It tastes good ! ^ ^
